April 23, 2012This is the first Easter I have ever cooked Easter dinner. My Easter’s have always been spent with my mother’s family in Missouri until I was 6 & then just my immediate family with everyone else cooking.
So yesterday I rushed home from Easter services to cook mustard glazed beef tenderloin, parmesan bread crumb roasted asparagus & fresh rosemary roasted new potatoes. Martha Stewart’s recipes I found some time ago & have been saving for a special occasion. Well not the potatoes. I do those all the time.
Usually, some things I cook turn out wonderful with most overcooked or just not quite like the picture. And certainly nothing finishes cooking all at the same time! But yesterday, everything was deliciously perfect & all came out of the oven together. I felt like I was on my very own cooking show.
We sat down to dinner with my mother’s fellow widow friend, Glenna, to enjoy the feast & friendship while watching the much needed rain. Glenna finished our meal with chocolate gelato topped with fresh raspberries, hazelnuts, hot fudge & whipped cream. Creamy, gooey Perfecto! Even Tesa, Glenna’s Shih Tzu, enjoyed her portion of Easter dinner.
I can’t think of a better way to celebrate the Easter gift given to the world than to truly be thankful for & share the blessings in our own personal lives.
